Ingredients:
- 2 cups peeled garlic cloves
- 2-3 cups olive oil (enough to fully submerge the garlic)
- Optional: Thyme, rosemary, or bay leaves for added flavor
Instructions:
- Prepare Garlic: Place the peeled garlic cloves in a small saucepan.
- Add Olive Oil: Pour in enough olive oil to fully cover the garlic cloves.
- Cook Low and Slow: Set the saucepan over low heat. Cook the garlic very gently for 45 minutes to 1 hour, until the garlic is tender and lightly golden but not browned. The oil should stay at a very low simmer.
- Cool and Store: Let the garlic and oil cool, then transfer them to a clean jar. Store in the refrigerator for up to 2 weeks.
Use: Garlic confit is perfect for spreading on bread, mixing into pasta, or adding to sauces for extra flavor.
